Millets, as cereal crops, do not typically contain high levels of iodine. Millet contains goitrogens.These compounds inhibit the thyroid gland's ability to use iodine. Iodine is required for the production of thyroid hormones, which are responsible for metabolic regulation and growth. In areas where people are already deficient in iodine, a millet-rich diet may contribute to goiter, which is an enlargement of the thyroid gland. Precautions we can take: Cooking can help: Soaking or fermenting millets before cooking can help to reduce their goitrogenicity. Variety is key: Include other iodine-rich foods in your diet, such as dairy, seafood, and iodized salt, to counteract any potential interference from millets. What are the negative effects of iodine deficiency disorders? Goiter is the most common Iodine Deficiency Diseases(IDD), characterized by an enlarged thyroid gland. The thyroid gland attempts to compensate for the lack of iodine by expanding. Goiters cause swelling in the neck, difficulty swallowing, and coughing. Hypothyroidism refers to an underactive thyroid gland. Symptoms of hypothyroidism include fatigue, weight gain, cold intolerance, constipation, and dry skin. Cretinism is the most severe type of IDD. It results from severe iodine deficiency during pregnancy and infancy. Cretinism symptoms include intellectual disability, short stature, and physical deformities.
