Heat a wok or large saute pan over medium-high heat.

Add the oil, then add the onion and cook until soft and translucent, about 5 minutes. Add the garlic, ginger, turmeric and cumin and cook for 1 minute more.

Add the tomatoes and cook until they begin to break down, about 5 minutes more.

Stir in the chickpeas, then add 2 cups water and bring to a boil over high heat. Reduce heat to medium-low, cover and simmer until chickpeas are tender but not falling apart (taste one), about 30 minutes.

Reduce the heat to low and simmer for 15 minutes until the sauce has thickened slightly. Remove from the heat and stir in half of the chopped coriander and mint leaves. Serve topped with remaining coriander and mint leaves with naan bread or rice on the side
